Cookie franchise Insomnia Cookies plans to debut a new outpost in San Antonio.
According to a recently submitted construction permit application, the shop is coming to 6010 UTSA Boulevard, Suite 104 — near establishments such as Costco, Rooms To Go, and The Luxx apartment complex.
What Now San Antonio reached out to Insomnia Cookies to inquire about the expansion, but representatives could not provide additional information before publication.
Nevertheless, the filing offers further insight.
Renovations to the 1,563-square-foot space are scheduled to begin on January 15, 2024, and finish in late February. For an estimated $234,927, Cleveland-based firm Onyx Creative, Inc. will carry out the project.
Locals can expect the Insomnia Cookies outpost to serve fresh-baked cookies, cookie cakes, brownies, and cookie & ice cream sandwiches — plus side orders of icing for those feeling indulgent — for delivery and pick up.
