According to a recently submitted permit application, fast-casual sushi chain Trapper’s Sushi Co. is expanding its San Antonio footprint.

Coming to 6626 W Loop 164 N, Suite 222, the eatery will join the Culebra Commons business center, landing alongside establishments such as Bubba’s 33, The Longhorn Cafe, and Via 313 Pizza.

What Now San Antonio reached out to the concept’s founder and owner, Trapper O’Keeffe, to inquire about the upcoming outpost, but he could not provide additional information before publication. 

Nevertheless, the filing offers further insight.

Renovations to the existing 4,504-square-foot restaurant — which include adding a new liquor and sushi bar — will begin on March 18 and be completed on April 29. For an estimated $98,000, the project will be carried out by Pheonix-based design firm KTM Design Studio

For readers who are unfamiliar with Trapper’s Sushi, O’Keeffe founded the concept in 2004 as Sushi Town in Bonney Lake before expanding as Trapper’s Sushi to Covington, its second location, followed by stores in Puyallup and Bremerton. 

“We’re proud to now be serving 15 communities across Washington state, Arizona, and Texas,” the eatery shares on its website.
