According to a recently submitted permit application, Pollo Regio is gearing up to debut a new outpost at 1150 Airport Boulevard — near establishments such as Beto’s Restaurant #2, Golden Chick, and Jack in the Box.

What Now San Antonio reached out to the company’s CEO, Hector Rodriguez, to inquire about the expansion, but he could not provide additional information before publication.
Nevertheless, the filing reveals that the finish out of the 2,005-square-foot space is scheduled to begin on February 4, 2025, and finish on June 30. For an estimated $400,000, the project will be carried out by the Irving-based firm IDStudio4, LLC.
For readers who are unfamiliar with Pollo Regio, the business website offers a brief introduction: “Pollo Regio originated in Monterrey, Mexico, and brought its authentic recipe for Mesquite-grilled chicken to Texas in the early 2000s.”
The statement continues, “Pollo Regio was founded by Mr. Bazaldua. He set up a food trailer that was outfitted with a charcoal grill, over which he cooked his special-recipe marinated chicken… It quickly became a successful concept and soon Pollo Regio moved into a regular storefront.”
